This delicious wine is named after our son, Kai Christopher Colloca, who we affectionately call Kaibo. His bubbly personality and wits match the harmonious blend of the freshness and complexity of this sparkling white wine comprised of 83% Chardonnay and 17% Pinot Noir. The wine underwent 100% malolactic fermentation after sitting on lees for over a year adding texture, complexity, and soft creamy mouthfeel on the palate. Bursting with effervescence, fresh lemon zest from the Chardonnay and strawberries and cream from the Pinot Noir. It can be consumed now or aged for years to enjoy. 12.0% alc.
