Colloca Estate Winery is not your average winery, its a destination. Dr. Chris Colloca coined the term, “Destination Fair Haven,” ten years ago that the community has embraced to distinguish Colloca Winery and Fair Haven’s location and uniqueness as a premier resort village in upstate New York. The 103-acre Estate is home to 30 acres planted specific to vinifera (European wine grapes) and 900’ of pristine waterfront on Fair Haven Bay, a wine production facility, tasting room, event center for private catered events, two restaurants, and full service seasonal wine bar. The venue offers live music 5 days a week in summer time, in addition to artisan market days, themed evenings with happy hours, karaoke, music bingo, trivia, comedy nights, murder mystery dinners, elegant wine pairing dinners, concerts, and more. Private Events at Colloca Estate Winery
Colloca Winery is one of Central New York’s most sought after events venues and we book events months to years in the future. Our million-dollar views, no-nonsense policy, quality service and affordable pricing make our place a very popular venue for private events that we exclusively cater. The Fair Haven Events Center at Colloca Estate Winery is a 10,000 square foot masterpiece of design featuring 3,600 linear feet of natural local timber beams constructed by local craftsmen. The ballroom can host smaller weddings of 100 guests, and together with the mezzanine level welcome over 600! During the season, the winery comes alive with hundreds of guests flocking to #DestinationFairHaven to enjoy all the winery has to offer, and The Wine Bar is a favorite meeting point. Don’t be fooled by the name, in addition to our 16 wines available by the glass or by the bottle, we have cold craft beers and ciders on tap, and a host of specialty cocktails to enjoy. The Wine Bar was chosen by Syracuse.com among the ‘Top Ten Outdoor Bars in Central New York’, and was selected as the people’s choice in the 2022 Syracuse Area Music Awards (SAMMY) for ‘Best Music Venue.’

Great food compliments fine wine at The Winery Bistro, where authenticity is key. Sourcing local ingredients whenever possible and using old-world recipes, we set out to create a menu and al fresco dining experience that would pair well with our wines inspired by food that we have enjoyed in our travels worldwide. We showcase fresh preparations that are health-conscious and bursting with flavor for your enjoyment.
